Comfort Comestibles

I am deeply interested, as those who have experienced my Ralph Ellison argument will attest, in the idea of "comfort food." But I also am deeply interested in eating it. Last night I made one of my long-time favorites: ground beef with onions, rice and creamed corn. I made some minor changes, though, that retained the meal's familiarity while improving it slightly, adding mushrooms to the beef and supplementing the corn with frozen kernels and a little buttermilk. I am still coasting on the comfort, even as I sheepishly acknowledge that I eat meat with decidedly un-PC relish.
